hello guys materi today is how to make bread that used mix of sour dough that before alredy made respectively group. And today mt group made to sponge chocolate mandarin. before how to make bread we advance made to leaven.

Ingredients :
1 tsp sour dough
75 gr water
75 gr hard flour

Cooking Methode :
1. mix all ingredients.
2. keep in 12 hour.

after that of made leaven we used for made bread.
How to make bread

Ingredients :
leaven
250 gr hard flour
200 gr fat
7,5 gr salt
300 gr water

Cooking Methode :
1. dissolve salt with 50 gr water.
2. mix all ingredients except dissolve salt.
3. knead the dough but no until well
4. keep in the temperature room in 1 hour.
5. mix the dough and add dissolve salt little by little.
6. proofing the dough in 20 minutes.
7. moulding the dough and the last baking.



while waiting bread ripe we to prepare ingredients and tools that used for made to sponge.

Ingredients :
15 pcs    egg yolks
5 pcs      egg white
200 gr    sugar
100 gr    flour
25 gr      corn strach
20 gr      milk powder
15 gr      tbm
75 gr      melted butter
2 tsp       chocolate paste
25 gr      chocolate powder

Cooking Methode :
1. prepare all ingredients and tools.
2. mix egg yolk, egg white, tbm and sugar untl stiff.
3. after that add flour, corn strach, chocolate powder and milk powder. mix manual
4. add melted butter and chocolate paste mix until well.
5. mould and bake in temperature 170 c in 15-20 minutes.
